profiles: fix sys-devel/clang on standalone prefix

On standalone prefix, sys-devel/clang needs to be configured with
-DDEFAULT_SYSROOT=${EPREFIX} and also needs the same treatment as
sys-devel/gcc to remove --sysroot=${EPREFIX} from ld calls.
