profiles: ROCm 6 is now in good shape and can be unmasked

PR https://github.com/gentoo/gentoo/pull/35998 bumps rocm ebuilds to 6.1
and are well tested. Although some test failure exists in dev-util/hip,
it is usable in most cases.
